Quaker Butter Popped Corn Rice Cakes

medium-sized tomato, thinly sliced
1/2 c
1% low-fat cottage cheese
2 T
shredded carrot
11/2 t
chopped chives or green onions
1/4 t
dried basil
 
paprika (optional)

Instructions

  • Place 2 or 3 slices of tomato on each Butter Popped Corn Rice Cake
  • Combine cottage cheese, carrot, chives and basil and mix lightly
  • Top tomato slices with cottage cheese mixture.
  • Garnish with paprika, if desired.
