Veggie Delight

Ingredients: Serves 4
- 4
- Quaker Butter Popped Corn Rice Cakes
- 1
- medium-sized tomato, thinly sliced
- 1/2 c
- 1% low-fat cottage cheese
- 2 T
- shredded carrot
- 11/2 t
- chopped chives or green onions
- 1/4 t
- dried basil
- paprika (optional)
Instructions
- Place 2 or 3 slices of tomato on each Butter Popped Corn Rice Cake
- Combine cottage cheese, carrot, chives and basil and mix lightly
- Top tomato slices with cottage cheese mixture.
- Garnish with paprika, if desired.
